New Glarus Beer Gets the Soft-Serve Treatment at State Fair

Wisconsin State Fair visitors will be able to try a frozen dessert made with New Glarus Brewing Company’s Raspberry Tart brew this summer, following the successful debut of a similar raspberry beer soft serve item at the 2025 Minnesota State Fair.

New Glarus Beer Gets the Soft-Serve Treatment at State Fair

WEST ALLIS, Wis. — One of New Glarus Brewing Co.’s most distinctive beers will be served in an entirely new form at the 2026 Wisconsin State Fair: swirled into a lightly alcoholic soft-serve dessert.

The new “Soft Serve Beer” combines Raspberry Tart beer with Wisconsin dairy and will be sold at the Bud Pavilion during the fair’s 11-day run from Thursday, Aug. 6, through Sunday, Aug. 16, at Wisconsin State Fair Park in West Allis.

Fair organizers describe the creation as “Wisconsin summer in a cone.” It is one of dozens of new foods and beverages announced for this year’s fair, where unusual combinations and over-the-top culinary experiments have become nearly as much of a tradition as livestock competitions, carnival rides and cream puffs.

Despite the Bud Pavilion location, New Glarus Brewing Co. co-founder Deb Carey said there is no unexpected irony behind the arrangement.
