Trails Pizza Targets Oct. 9 Opening, Unveils New Menu
After weeks of recipe testing and behind-the-scenes work, brothers Jon and Phil Cruse are nearing the debut of Trails Pizza, with a smaller menu, scratch-made items, delivery plans and a few changes waiting for New Glarus diners soon.
Trails Pizza is targeting Friday, Oct. 9, for its opening at 700 Railroad St. in New Glarus, giving brothers Jon and Phil Cruse a little more than a week to finish preparations before welcoming customers into the former Sugar River Pizza restaurant.
Jon Cruse said on Wednesday that he is about “99%” confident in the Oct. 9 target, provided the remaining pieces fall into place. The opening would come after a transition period that lasted longer than the brothers originally hoped when they purchased the New Glarus operation earlier this month.
The Cruses are not simply changing the name on the door. Jon said the final Trails Pizza menu was completed Wednesday and was being sent to printers, with plans to also put it online. The goal, he said, is a more focused menu than the former Sugar River Pizza menu, with fewer items and more attention paid to making each one well.
“The only thing on the menu that is still the same is the cheese,” Jon said. Trails Pizza purchased the restaurant’s equipment, smallwares, plates and other operating items, and the brothers received permission to continue using the same cheese that had become part of the Sugar River Pizza recipe.
