MONROE, Wis. — Green County’s cheese industry has always produced whey, but the watery byproduct left behind after milk is turned into cheese is no longer just something factories need to get rid of.

Today, whey is part of a much larger dairy ingredients economy tied to protein powders, nutrition drinks, food manufacturing, animal nutrition and, in some cases, nutrients returned to farm fields.
