WEST ALLIS, Wis. — New Glarus Brewing Company’s Raspberry Tart has received the soft-serve treatment at the Wisconsin State Fair — and early reactions suggest the distinctly Wisconsin creation is already a hit.

The new dessert, sold at the Bud Pavilion, combines the New Glarus brewery’s fruit beer with Wisconsin dairy. WTMJ-TV in Milwaukee reported that fairgoers trying the treat on opening day praised its balance of raspberry sweetness and recognizable beer flavor.

Bud Pavilion owner Leanne Hock developed the recipe with her two sons over several months, experimenting with different combinations throughout the winter before settling on the final version.

“All winter long we tried different flavors and different things, but we perfected it,” Hock told WTMJ-TV.
