Sugar River Pizza’s New Glarus restaurant at 700 Railroad St. is expected to serve customers for the final time under its current name Sunday. The Cruse brothers then plan to begin the transition to Trails Pizza, with a goal of reopening in time for Oktoberfest.

Phil Cruse has worked at the New Glarus restaurant for more than eight years and has lived in New Glarus for about nine years. Jon Cruse previously served as general manager of the New Glarus restaurant and later worked at Sugar River Pizza’s Sun Prairie location before leaving the area. He moved back about two months ago and is now living in Belleville.

“This is super exciting,” Phil Cruse told New Glarus 360. “I’m passionate about pizza, super passionate about this community.”

The brothers intend to keep much of what customers have come to expect from the location while creating their own restaurant and menu.

Trails Pizza will continue serving pizza, sandwiches and pasta, but the recipes and pizzas will be the Cruses’ own. Phil said they also intend to continue using locally produced cheese, something he said has been an important part of Sugar River Pizza’s food.
